Simpsons Centre Cut Fillet of Beef is sourced locally from grass fed heifers slowly grown in Lincolnshire pastures. This succulent and tender cut is the ultimate in luxury when selecting a cut of beef. Taken from inside the rib cage this relaxed muscle is the most highly sought after piece of beef on the carcass often reserved for premium steaks in restaurants. The centre cut is widely considered the best beef for making beef wellington due to its consistency in size and barrel shape.
